At this year’s Michelin Guide awards in France, the discussion amongst top chefs extended beyond the celebration of stars to a transformative topic: artificial intelligence (AI). Matan Zaken, owner of the one-star Nhome restaurant in Paris, highlighted the significant role of AI in modern kitchens. "Everyone’s discussing AI," Zaken remarked, noting that many of his peers, despite their pride, actually rely on AI tools like ChatGPT to inspire new recipes and innovative pairings.
Zaken, 32, openly embraces AI, believing it can lead to exciting culinary discoveries. For instance, AI helped him uncover an unusual but complementary pairing of peanuts and wild garlic. Recently, he collaborated with the digital art collective Obvious Art to create dishes based on AI-generated images, flipping the traditional creative process on its head.
While chefs like Zaken advocate for AI’s potential, others express reservations. Philippe Etchebest, a renowned French chef, insists that AI cannot replicate the intangible elements of human cooking. Similarly, young chef Thibaut Spiwack emphasized the importance of local traditions and artisanal skills in the kitchen.
Despite mixed feelings about AI in the creative process, many chefs are adopting it for mundane tasks, utilizing apps for managing recipes and predicting demand based on various factors.
